The oil extracted from the Carolea cultivar is of excellent quality, has a golden yellow color with amber reflections, with a medium fruity flavor, where toasted aromas blend with vegetal notes with slight hints of fruit. The taste is delicate, sweet, of good intensity with bitter and spicy notes.

They comply with all parts of a Product Specification, which regulates the whole chain; from caring for the plants and the land where they are grown, to exclusive hand picking, transport to the mill and packaging. The quality of the product is certified by laboratory analysis and organoleptic evaluation carried by “Suolo e Salute” (certification body) in order to get Calabrian PGI certification.
